I recently tried baking a cinnamon pie, the heroine Lufia’s specialty from the eponymous Lufia and the Fortress of Doom. I used this recipe from Allrecipes.com, which seems ingredientwise in line with most of the other specimens I’ve found on the internet.
When I first heard of the “cinnamon pie” concept, the image that came to my mind was like the topping on a Dutch apple pie, maybe something like a tollhouse pie - something rich and crunchy to hold the spice. As it turns out, a cinnamon pie is instead a gloppier affair. Mine didn’t turn out custardy as in the Allrecipes picture; the best way to describe it, both in terms of consistency and taste, was like the filling of a pecan pie without the pecans. (I did, however, use turbinado sugar, which might affect the look of the filling somewhat.)
Most disappointing aspect: there’s not much cinnamon flavor. Given my tastes, I actually doubled the cinnamon (and the vanilla), and the overriding note was still plain sugar sweetness. Point in the pie’s favor, though: it takes a bit to cook and cool to the proper consistency, but it is easy to make - save for the pie crust, you probably have all the ingredients you need in your pantry. It’s an interesting experiment, and one that’s simple to try, but I guess I’m just lacking Lufia’s magic touch - I’m not sure I’d make this again.
